Preparation of chocolate, strawberry and vanilla Mousse

I did esteMousse of chocolate, strawberry and vanilla into heart molds. To unmold them well and that remained pretty decided to mount it upside down, i.e., starting with the layer that would be up to the turn. I froze it so to unmold the silicone mould, remain whole and perfect shape. But if you prefer, you can use a removable mold, start with the chocolate mousse, continue with the strawberries and finish with the vanilla.

1. Start with the vanilla layer. Mix the white chocolate, half of the cream, honey or syrup and salt in a microwave-safe bowl. Melt the chocolate at 30 second intervals moving well each time until the mixture is smooth and uniform. Put mixture in a large bowl and let cool to room temperature. moving with a spatula occasionally.

2. Meanwhile prepare the jelly: mix the gelatin powder with cold water in a small bowl, and let the gelatin moisturize well (absorb water - just a minute will be enough). When the chocolate is at room temperature, put gelatin in the microwave for 15 seconds, until it melts. Whisk the melted jelly and chocolate together and set aside.

3. In a bowl of an electric mixer, whip the remaining cream until firm peaks. With the help of a spatula mix with chocolate cream with care. Mix with the rest of the whipped cream. Pour into pan and cool for at least 25 minutes until firm so you can pour over the second layer.

4 For the Strawberry moussemake a quick puree crushing fresh strawberries in a blender or kitchen robot. passing through a fine strainer to remove the seeds and measure 100 ml of Strawberry puree (save the rest for milkshakes or ice cream).

5 Combine white chocolate, strawberry puree, half of the cream and salt in a microwave-safe container. Follow the process of the white chocolate mousse mix with the melted gelatine, and whipping the remaining cream. Add a few drops of pink food coloring (completely optional, I don't do it) to boost color. Extend well and let set in the refrigerator for at least 30 minutes.

6. Finally prepare the dark chocolate mousse. Mix chocolate, half of the cream and salt in a microwave-safe bowl.

7 Continue this layer in the same way as the two previous layers. At the end, pour the mousse over strawberries mousse layer.

8 Cool to settle flavors for at least 4 hours (better over night).

cream of 9 To finish, prepare a chocolate cream by melting the chocolate with the butter in the micro and decorate on top. You can dip some strawberries in chocolate and place one on each mousse heart which is what I did. If you do it in a large pan, it will look very nice covering it with a layer of chocolate and then placing over a good amount of strawberries to form a lot.

Tips and Tricks

  • Use raspberries instead of strawberries and you will get beautiful color and flavor.
  • If you don't like the taste of dark chocolate, use milk chocolate instead.
  • Add a few pieces of strawberries or raspberries inside the fruit mousse.
  • Difficulty: easy
  • Preparation time: 1 hour longer than cold
