These ravioli with pear sauce and gorgonzola are Javi's favorite.

Any pasta you prepare, you like it even more if it has this sauce, and it is elegant, tasty and original at the same time. I'm one of those who lives convinced that I was a mouse in another life and that's why I like cheese so much.

But if it's cheese with fruit then I'm already touching the sky with my hands and I have to admit that in this recipe the pear is great with the gorgonzola cheese, which you can substitute for another blue cheese. And By clicking here you can watch the video

Ingredients

  • 2 packages of ravioli
  • 2 pears
  • 50 g butter
  • 150 g gorgonzola cheese
  • 200 ml liquid cream at least 33% fat
  • 1 teaspoon nutmeg
  • 1/2 teaspoon freshly ground black pepper
  • salt to taste
  • a few leaves of Sage
  • 100 g chopped walnuts

Peel and cut the pears and cut the cheese into small pieces.

Sauté the pear in butter. Add the cheese and melt in the heat. Add the sage, cream and half of the walnuts along with the pepper and nutmeg. Adjust the salt and let the sauce thicken.

In the meantime, cook the pasta.

On a plate we put a glass of sauce, the pasta on top and cover with more sauce.

We finished with some chopped walnuts and some sage leaves
