This healthy sugar-free nutella cheesecake has become the surprise of the season at home.

Many of you have asked me for a sugar-free recipe for Valentine's Day and this seems to me the perfect recipe, not only for Valentine's Day, but for any day of the year because it is very easy, has a very rich flavor and because you can also take it without regrets.

It is made with sugar-free cookies and I could well have used them gluten-free also to make it suitable for celiacs. Homemade nutella is very easy to prepare but you can also buy a healthy nutella in the supermarket and avoid fats that we should not abuse.

Ingredients

For the base

  • 150 g sugar-free biscuits
  • 60 g of melted butter

For the filling

  • 400 g homemade chocolate nutella (recipe here)
  • 600 g light cream cheese at room temperature
  • 300 ml liquid cream at room temperature
  • 4 sheets of gelatin
  • 1 teaspoon of vanilla extract

For decoration

  • a handful of red fruits
  • 150 g dark chocolate without sugar

For the base crush the cookies and melt the butter. We cover the bottom of a 20cm mold (or a heart-shaped one like mine) with a baking paper and grease everywhere. Pour the cookie mixture over the making sure that the entire bottom is well covered. We put an acetate around the mold and grease again. We booked in the fridge.

For the filling we put to hydrate the gelatin leaves in a bowl with cold water.

Meanwhile, mix the cheese, with the cream and nutella, and with the help of an electric mixer crush until you get a smooth cream.

Heat the drained gelatine in a bowl for 10 seconds and add a large tablespoon of the cheese mixture to the gelatine. Mix well and repeat the process until the bowl temperature is the same as the cheese cream.

Pour over the mold and let cool for a few hours in the fridge (at least 4).

To decorate it, distribute a little melted dark chocolate on top. Decorate with whipped cream and a strawberry and caramelized hazelnuts.
