These watermelon cups are the easiest and most resultant dessert you can make with watermelon.

Low in sugar and with all the flavor of fresh fruit, watermelon plays a fundamental role here, Thanks to the fact that it is in the middle of the season we can find watermelons with a lot of flavor that allow us to prepare desserts like this almost without sugar.

You will only need 5 minutes and a few hours in the fridge to get the magic on your table.

Ingredients

  • 1 kg of seedless watermelon chopped into thick pieces (the peel is discarded)
  • 9 sheets of gelatin.
  • 60 ml water
  • 2 teaspoons vanilla paste
  • 2 teaspoons freshly squeezed lemon juice, strained

For decorating the cake

  • 150 g mascarpone cheese
  • 200 ml of liquid cream
  • 2 tablespoons sugar or honey or our favorite sweeten
  • Roasted pistachios without shell, chopped into large or ground pieces

Directions

Crush the watermelon until it is smooth and without lumps. We need about 800 ml of watermelon puree.

We hydrate the gelatin leaves in cold water.

Meanwhile, we strain with the help of a strainer. Heat the lemon juice with the water.

Drain the gelatin leaves well once hydrated, and dissolve them in the hot water with the lemon with the help of a teaspoon.

Add the vanilla and fill the cups 3/4 parts. Let cool in the fridge for at least 3 hours.

While e a bowl with the help of electric rods, mix the mascarpone cheese. When it does not have lumps and is creamy, add the liquid cream and sugar and continue beating until you get a smooth and consistent cream.

When the gelatin has curdled, decorate with the mascarpone cream with the help of a pastry bag and finish with some chopped pistachios.
