Chicken with lemon butter with Grana Padano cheese is absolutely delicious and I'm sure it's going to become one of your star recipes.
It is the perfect recipe to transform a sad chicken breast into a delicious dish that you can accompany whatever you like, and although around here the white rice is what I applaud the most, I also love it with a little cooked pasta or some roasted potatoes.
It is very easy to prepare and the secret is to add grated cheese to the flour and do the same with the sauce. In this way we will obtain a very velvety texture in the sauce and an extra crunchy coverage in the chicken that holds up very well with the sauce.
I hope you like it as much as at home.
Ingredients
- 1/2 kg chicken breast in fillets dried with absorbent paper
- 1 tablespoon olive oil, for sautéing
- 1 tablespoon parsley for garnish (optional)
- 1/2 lemon sliced
For the egg mixture
- 2 large eggs
- 1 garlic clove powder
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
For Grana Padano batter
- 1 cup grated Grana Padano cheese
- 3 tablespoons flour
For Grana Padano butter sauce with lemon:
- 120 g unsalted butter
- 2 garlic cloves, chopped
- 125 ml lemon juice
- 125 ml chicken broth
- 100 g grated Grana Padano cheese
- 1/4 teaspoon ground black pepper
Directions
In a bowl, mix the ingredients for the egg mixture.
In another bowl, put the ingredients for the Grana Padano mixture and mix well.
Pass the chicken fillets through the egg mixture and then through the grated cheese.
In a large skillet, heat the oil over medium heat and fry the chicken fillets until golden brown.
In a low saucepan, melt the butter and sauté the garlic, and cook until golden brown.
Add the chicken broth, lemon juice and pepper. Let the sauce cook for a couple of minutes. Add the chicken, and bring to a boil over low heat. Garnish with lemon slices and finely chopped parsley and voila!
Tips and tricks.
- The lemon slices can be bitter so I recommend you put them right when serving because they are very nice but do not leave them time.

May I have your advice, what kind of butter did you use in the sauce, the released ghee or the regular with 82% fat? Thank you for your answer.
Dear Lucia, thanks for writing. I uses the common butter with all the fat. Hope this helps, best regards
