This roast chicken with apples is going to become your best mate these days. And after so many days of excesses the body asks for lighter, healthier and more tasty meals because who has said that you can not eat healthy and rich at the same time?
The roast chicken with apples is golden and with crispy skin and very tasty inside. We take advantage of others to roast the apple and some vegetables so that it is a complete dish all in one: fit and garnish them which is the ones that I like the most to cook the meats and fish in the oven.
The most important thing in this recipe is chicken, so the better the chicken the richer the result of our roast chicken with apples. Even if it's the chicken, I assure you that cooking it like this transforms it.
For the chicken:
- 1 whole chicken
- 1 Apple
- 80g butter or margarine
- a teaspoon of rosemary salt (or salt and some chopped rosemary)
- 4 garlic cloves, chopped
- 3 sprigs fresh rosemary
- salt and freshly ground black pepper
- a little salt and pepper (or a concentrated-optional chicken broth pill)
For the garnish
- 1 large onion cut into wheels
- 2 leeks
- 3 potatoes
- a bunch of grates
- 3 carrots
- 1 head of garlic
Preheat oven to 190 degrees. Remove all the grills from the oven except one that we will leave in the middle position.
Let's put some salt and pepper in the chicken or a chicken broth concentrate pill.
In a small bowl, combine the very soft butter, the very chopped garlic and the rosemary salt. If we don't have rosemary salt mix the salt and finely chopped rosemary.
Carefully separate with the help of the fingers, the skin of the chicken from its meat and gradually introduce the butter mixture throughout the breasts and thighs. The one we get over, we put it inside the chicken along with the apple.

We put the chicken inside the saucepan lightly oiled and around the chopped leeks. We laminate the sliced potatoes forming a fan without cutting them at all. Cut the carrots and onion into pieces. We chop the garlic cloves and cut the head of garlic in half and put it also in the saucepan. We water the vegetables with a little oil and sprinkle.

After this time, if the chicken is not well browned, turn on the grill and let it brown for a few minutes so that the chicken gets a nice color. Serve with vegetables.
