These Fabes with prawns have moved into the top 3 of spoon dishes at home and this year with so much cold and rain I can't stop preparing spoon dishes.
They are energetic dishes that warm us up, comfort food that Americans call and that is also very healthy because it contains almost no fat. the best? In addition to being very easy to prepare, they freeze wonderfully, so you can make a large amount and you will have enough for two or three days.

Ingredients
To cook the beans
- 700 gr. of phases or beans
- 1 onion
- 3 bay leaves
- 1 carrot
- 5 cloves of garlic
- water to cook
- 40 ml olive oil
For the rest:
- 700 gr. of prawns
- 100 ml of cognac or brandy
- 1 green pepper
- 1 leek
- 2 tomatoes
- 2 tablespoons of tomato concentrate
- 150 ml of white wine
- 2 cloves of garlic
- Salt
Directions
We soak the beans the day before.
Meanwhile, in a frying pan, add a few tablespoons of extra virgin olive oil. Peel the prawns and sauté the skins and heads in the oil until they release their juice. We add the cognac and flambé, adding well with a wooden spoon to extract all the juice. We strain with the help of a strainer or a Chinese strainer, crushing it so that all the juice is released and we reserve.
In the same pan we add a little more oil and add the chopped green pepper, the leek and the also chopped garlic cloves. Sauté until the vegetables are tender.
