Red rice with fresh herbs and feta cheese salad today. This salad's red rice with fresh herbs and feta today is very quick to prepare and even my son sucked the fingers.
The main ingredient is red rice that is very good for us because it has a high content in fiber, which gives us feeling of satiety, (so we eat less without knowing us), has very little sugar and many antioxidants, so it's worth taking it. It also has a very nice color and a flavor other than basmati rice.
The other ingredients are easy and or they have at home or you can find them in the store below, salad can take it prepared a tupper office because when more time is seasoned more flavor will pick up the rice. So let's go for it, and in a little while you're eating it yourself.
- 175 g of red rice - can use basmati rice or brown rice
- 1 red onion
- 2 Tablespoons extra virgin olive oil
- 1 lime
- 100 g feta cheese
- 1 bunch of chives
- 1 bunch of fresh cilantro
- salt
- freshly ground black pepper
Directions
Cook the rice. Red rice need 3 parts and a half of water for every part of rice and need between 20 and 25 minutes of cooking. Once cooked, rinse thoroughly in cold water and drain well.
Finely chop the chives and cilantro and book.
Finely chop the red onion brunoise (small squares). Book.
Grate the half lime zest and squeeze the juice. Book.
In a bowl put well drained rice (when most dry more release will be the salad). Add the onion. Add salt and pepper.
Add the extra virgin olive oil, and the zest and lime juice. Mix well.
Sprinkle with chopped fresh herbs and finish crumbling feta cheese on top.
- Add a little chicken grilled or boiled
- If you are going to wear to the office, add herbs chopped at the last minute so be crunchy
