These lemon yogurt fritters are one of my favorite All Saints and Easter recipes at home. They are prepared in 5 minutes and in 10 you will have your snack or breakfast ready.
You don't need more than a bowl and a whisk, a saucepan and two teaspoons and you'll open the door to the fluffiest fritters you've ever tasted. They are handmade without the need for a blender and if there are children at home, they will enjoy it very much.
Ingredients
- 300g yogurt
- 2 eggs
- 60 g sugar
- 1 teaspoon pure vanilla extract
- 11g yeast powder
- 1 teaspoon lemon zest (serves lime, orange, or tangerine)
- 300g all-purpose flour
- 400ml frying oil
Directions
In a bowl, combine the yogurt, eggs, sugar, vanilla, yeast and lemon zest. Add the flour and a pinch of salt and mix well. Mix until you have a smooth handle. Let it rest for 10 minutes.
Place a small pot or scoop with oil over medium-high heat. When the oil temperature reaches 170oC we start frying. We carefully drop a teaspoon of the dough into the hot oil. We repeat the process, but without filling the scoop. We'll work in ties of about 5 or 6 maximum.
Fry for about 4 – 6 minutes or until the fritters are golden. Shake the pan from time to time. With the help of two spoons we flatten the tips so that they are round.
We move to a plate with absorbent paper, and serve sprinkled with icing sugar, cocoa powder, melted chocolate or maple syrup.

- They're delicious freshly made, but the next day you can give it a few seconds of microwaves and they'll still be delicious
