Ingredients

For the cookie dough:

  • 180 g pastry flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 tablespoon of cornstarch
  • A pinch of salt
  • 120 g unsalted butter
  • 60 g brown sugar
  • 60 g sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 150 g chopped dark chocolate or chocolate pearls

For the brownie batter:

  • 110g butter
  • 150 g dark chocolate
  • 100g flour
  • 15 g pure cocoa powder
  • 1/2 teaspoon of baking powder
  • 150 g sugar
  • A pinch of salt
  • 3 medium eggs
  • 1 teaspoon pure vanilla extract

Directions

We preheat the oven to 175 °C.

For the cookie dough, mix the butter with the sugar until we have a smooth dough. We add the egg and mix again. Add the flour, salt, baking powder and baking soda along with the vanilla and mix with the spoon until you have a compact dough without traces of flour.

For the brownie, chop the chocolate and put it in a bowl along with the butter. We melt in the microwave for 60 seconds. Let it rest for 30 seconds and stir lightly until you get a smooth cream without any chocolate pieces. If necessary repeat 30 more seconds.

In a medium bowl, combine the flour, cocoa powder, baking powder and salt, and beat until combined. In a large bowl, beat the eggs and granulated sugar for 1 to 2 minutes. We add the melted chocolate. Then, add the flour mixture and stir lightly. We add the salt and vanilla. With a spatula, mix with enveloping movements until the mixture is integrated.

Pour half of the brownie mixture into the bottom of the mold. Add tablespoons of cookie dough to the mixture. Add the rest of the brownie batter evenly on top. We cover with the rest of the cookie dough on top.

We cover the mold with aluminum foil and bake for about 30-35 minutes. Uncover and continue baking for 5 minutes until lightly golden.
