  • 50 g grated Grana Padano cheese

  • 100 g smoked salmon
  • 3 leaves of lollo rosso or oak leaves

  • 1/2 of a red onion, chopped into squares
  • A few drops of tabasco (optional)
  • A little lemon or lime zest
  • A few drops of lemon or lime juice
  • A little salt

Directions

We preheat the oven to 200 °C.

Cut the sweet potato into thin slices and the zucchini into long strips.

We place 8 strips of zucchini, one below the other, overlapping them a little, on the long strip of cheese.

For the other sandwich we place 6 sweet potato wheels, keeping them as close together as possible, overlapping each other slightly to form a rectangle, and we repeat with the other rectangle.

Season to taste and then add another thin layer of grated Grana Padano cheese on top of the vegetables.

Bake for 20 minutes until golden and crispy. We remove from the oven, let it cool a little and carefully take off.

Meanwhile, we prepare the guacamole: mash the avocado with a fork. We add chopped coriander leaves, chopped red onion, a little salt, a few drops of Tabasco and a little of the zest and juice of lemon or lime.

In a frying pan with a few drops of oil, fry the egg until the white is curdled, leaving the yolk whole.

We cut the zucchini “bread” in half, which will be crispy. In this way we will have two slices.

For the zucchini we add a layer of lettuce leaves, on top of some slices of turkey breast. On top we can add a little mayonnaise, some wheels of red onion and some slices of tomato. We finish with some slices of avocado and some black sesame seeds, salt and pepper.

For the sweet potato sandwich, we cover with one of the "slices of sweet potato with the guacamole. We put on top some slices of smoked salmon, some leaves of oak leaves (or your favorite salad) and we finish with a grilled egg. We cover with the other slice and that's it.
