This stuffed turkey is the easiest you are going to prepare this Christmas and also the richest. They are stuffed turkey breasts in the easiest and most delicious way.

You can prepare them now and take them whenever you want because they freeze very well and the sauce is taking bread and wet.

For the turkey

  • 1 kg clean turkey breasts
  • 250 g of bacon sliced stretched with the back of a knife
  • fresh bay leaves
  • 2 Tablespoons extra virgin olive oil
  • 200 ml of sherry or chamomile or amontillado. The one you like the most
  • 500 ml chicken broth

For the filling

  • 400 g fresh sausage meat
  • 1 red onion, chopped
  • 6 prunes ready to eat, chopped
  • 6 ears ready to eat, chopped
  • 15 g canned black truffle chopped
  • a bit of nutmeg
  • a splash of brandy
  • salt and freshly ground black pepper

For the sauce

  • 200 ml double cream
  • a few leaves of Sage
  • 100 ml port
  • 2 shallots, chopped

To accompany

  • 1 block in taquitos
  • 2 tablespoons butter
  • 400 g garnish potatoes

Directions

Mix the ingredients of the filling in a bowl. Season cone salt and pepper and set aside.

We put a chicken breast on the countertop. We put in the center a ball of the filling and fold the breast forming a ball. We put a slice of bacon around wrapping the breast.

Repeat with all breasts. We pass a string from top to bottom and tie the breast. Then we pass another string forming a cross with the first. And we end up with a third party forming a star.

Heat the oven to 200 ° C. Put the breasts in a saucepan suitable for the oven putting some bay leaves and sprinkle with a little oil. Bake for about 20 minutes.

Take out and pour the sherry and broth. Cover with aluminum foil and roast for about 20 more minutes until the center of the breasts have about 70 degrees in the center (we will use a thermometer with probe if we want accuracy but with these times they must be perfect).

Once the breasts are ready, we take them out of the oven and pass them to a plate.

Put the saucepan on the fire and reduce the sauce. Move with a wooden spoon and let it boil over low heat.

Meanwhile, in a saucepan sauté the shallots with a little oil. Add the cream and wine. And a few sage leaves, and let it boil until the sauce is thick. Then add two small pieces of the sauce of the breasts and give a boil.

Return the turkey breasts and let cook for a few minutes.
