This is the Nicoise Salad, the salad they have in all the restaurants in Nice and in general throughout the French Riviera, and I'm not surprised at all because it is delicious.

The best thing about this salad is the sauce, halfway between a vinaigrette and a Caesar sauce but absolutely delicious. I hope you like it as much as we do at home.

And although I have included all the ingredients it contains, please feel free to add or remove as you have in the fridge because it is also a fantastic way to use up the leftovers we have before they go bad.

Ingredients

  • 5 small or 3 medium potatoes
  • 250 g round beans
  • 1/2 red onion
  • 1/2 cucumber
  • 3 radishes
  • 3 eggs
  • 2 medium tomatoes
  • 1 trocadero lettuce
  • 1 jar of natural tuna loins
  • 1/2 can of black or dressed olives

For the sauce

  • 1 clove of garlic
  • 3 anchovy fillets
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon sunflower oil
  • 1 tablespoon water
  • 1 teaspoon apple cider vinegar

Directions

In a saucepan with plenty of salted water, boil the potatoes with their skin on. When they are tender, add the green beans for 2 minutes. After this time, we transfer the vegetables to a bowl with very cold water (I added ice).

Cook the eggs in that same boiling water for 10 minutes until they are hard. We reserve in cold water.

For the sauce, in a mortar, crush the garlic clove with the anchovies. When we have a paste, add the mustard and mayonnaise and mix well. We then add the vinegar, oil and water and mix until emulsified.

We chop the onion very finely, and we do the same with the radishes. Cut the cucumber into rounds and quarter the tomatoes.

Peel the potatoes and cut them into cubes of about 2 x 2 cm.

On a large plate we put a bed of leafy vegetables (Trocadero lettuce, lollo rosso, oak leaf...). We place the green beans on top and distribute the rest of the ingredients, making sure that they are well distributed over the plate. In the center we put the tuna and the potatoes.

We sauté with the anchovy sauce and enjoy healthy, delicious and beautiful food at home!
