The Malaga salad is one of the most popular all year round but especially in summer because it is very refreshing and because of its original and unique flavor contrast. The mixture of the sweetness of the oranges with the saltiness of the cod and the bitterness of the olives makes it unique and delicious.
It is very simple to prepare, ingredients that you almost always have at home and a unique combination of flavors that makes it very appetizing and very popular with children and adults.

Ingredients
- 300 g salted cod
- 3 eggs
- ½ kg of new potatoes
- 1 red onion
- 2 oranges
- 100 g of chopped seasoned olives (in order to remove the stone it is important that they are split)
- Olive oil
- Vinegar
- Salt
Directions
We desalt the cod in a bowl with cold water for 24 hours, changing the water at least 3 times. We drain well and dry with the help of a kitchen cloth. We sauté it in a little oil in a very hot pan and set aside.
Cook the eggs in plenty of boiling water for 10 minutes and the potatoes with their skin until they are tender. When they are no longer hot, chop the eggs and set aside. Peel the potatoes and chop them into pieces of about 2 cm and set aside.
Chop the onion finely and set aside.
Peel the oranges and, removing the white part, chop the segments into pieces.
We remove the stones from the olives and in a large bowl we mix all the ingredients. Season with a little vinegar, oil and salt and finish with a little chopped chives.
