This pistachio and chocolate granola is my version of the Dubai chocolate that my mother likes so much. It is a fantastic way to prepare a delicious breakfast that everyone at home will like and that we can also eat as a snack or to deliver coca because it is delicious alone too.

It has an incredible pistachio flavor and is also very easy.

Ingredients

  • 3 cups gluten-free oats
  • 1 cup coarsely chopped raw pistachios
  • ½ cup coconut chips
  • ½ cup pumpkin seeds
  • ½ cup chocolate chips
  • ⅓ cup banana chips
  • 1 teaspoon cinnamon
  • ¾ teaspoon sea salt
  • ½ cup olive oil
  • ½ cup pistachio cream
  • ½ cup maple syrup
  • 1 teaspoon vanilla
  • 100 g chocolate nibs or chopped dark chocolate

Directions

We preheat the oven to 160 °C with convection (if you only have heat above and below then we bake at 170 °C).

Add the dry ingredients to a large bowl and mix. In a small saucepan, put the liquid ingredients: maple syrup, pistachio cream, olive oil and vanilla. Heat over medium heat, stirring until well combined.

Pour the liquid ingredients over the dry ingredients and mix until there are no unmixed parts. All the oats should be well covered.

Spread the mixture evenly on two baking sheets, pressing the granola firmly onto the tray with the help of a spatula from one corner of the tray to the other.

We place in the oven and bake for 20 minutes. We turn the tray over (put the front part behind) so that it bakes well on all sides, and we bake another 10 minutes. The granola should be dry to the touch.

We wait for the granola to cool completely before removing it from the tray. If we want to add chocolate, now is the time. We mix and that's it.
