Ingredients

For the filling

  • 2 whole wheat tortillas - 2 hard-cooked eggs
  • 2 avocados
  • 1 red onion
  • 1 filet of smoked salmon (or salmon marinated beets I prepared like this here)
  • 1 bunch of cilantro
  • 1 lime
  • salt
  • a few drops of tabasco

For the sauce

  • 100 ml of homemade mayonnaise
  • 1 avocado
  • a pinch of salt
  • a few drops of lime

Directions

Prepare a homemade mayonnaise with olive oil and milk for the sauce. Add the avocado, a few drops of lime and a little Tabasco. Beat with a mixer until a smooth and creamy texture. Season with salt and pepper and reserve.

Cut the salmon into small tacos and set aside.

Chop the avocados into squares. Chop the onion as small as possible and the cilantro and eggs into small pieces as cubes.

Put all ingredients except the salmon in a bowl and add the juice of half lime and half a teaspoon of salt, being careful when it comes to move them, to make the egg yolk not crumbs.

Take a tortilla integral and with the help of a spoon, spread of avocado mayonnaise. Cover with salad and finish with some salmon tacos. Carefully roll up tortilla. Cut e pieces and present it in a dish with a bowl with avocado mayonnaise. Enjoy!
