Today I bring you braised lentils from my mother, because here we are still dragging some kilo of Christmas so we continue in a healthy way to more than we can.

They do not carry meat or fat but they do have all the flavor of traditional chup-chup. And today I bring you the lentils that have been prepared in my house of a lifetime, those of my mother of always that to me (like the croquettes of each mother), they seem the best.

Even so I give you the option of putting chorizo (in my house they do not forgive it) but I like them much more without any fat. It is a spectacular dish for any day of the week, perfect for cold days, ideal for those who do sports and perfect so that legumes are never missing at home.

And all that in half the time thanks to the express pot. But if you do not have do not suffer that I also leave you the recipe to be able to make them without a quick pot. let's go for it!

Ingredients

  • 80 ml extra virgin olive oil
  • 2 onions
  • 2 cloves of garlic
  • 3 slices of whole wheat bread
  • 200 ml homemade fried tomato
  • A teaspoon of sweet paprika
  • 1 kilo lentils
  • Water
  • 2 Bay leaves
  • 2 cloves
  • Half a teaspoon of salt
  • 5 carrots
  • 4 medium potatoes
  • 200 g Iberian chorizo (optional)

Directions

The night before we soak the lentils. The next morning we rinse and drain them.

Finely chop the garlic cloves and onions. Sauté in the express pot where we are going to cook the lentils (see below the note to cook them without an express pot), with the oil over medium heat until they are tender. Then add the slices of bread and let them fry until they take on a golden color on both sides.

Add the homemade fried tomato and sweet paprika and let fry for a minute. With the help of a hand mixer, crush until you get a fine puree.

Add the lentils to the express pot along with two bay leaves.

Peel the carrots and potatoes. Cut the carrots into sticks and the potatoes into segments and add them to the pot. Cover with water, add the salt and move well.

Cover and put the express pot at number two. Once the steam is sautéed, let it cook for 20 minutes over low heat.

If we want to prepare them in a traditional saucepan, we will prepare them in the same way, but letting them cook for a couple of hours over medium-low heat until the lentils are tender.

Meanwhile in a saucepan cook the rice in plenty of water. When the rice is ready, rinse it with cold water, drain and set aside.

After this time, we wait for the pot to cool. If we are in a hurry we can put the pot under the cold water tap until the pot has lost pressure we can open it safely.

Serve the lentils with some white rice and some chorizo. As in my house my two men take them like this, he likes to put the lentils in or saucepan and give them a last boil with the rice and chorizo to integrate all the flavors well.

  • You can make half the amount by dividing all the ingredients by two
  • If you like it with chorizo you can put the chopped chorizo directly in the express pot before closing it
