These spaghetti with pumpkin and sage have conquered us this autumn. It is true that sage is not an herb that we use very commonly in our kitchen, but it is one of the ones that leaves the most mark on you when you travel to Italy.

There the sage with pumpkin, with lemon or simply with butter. And it is that the flavor it gives to the dishes is unique and makes getting sage here worth it.

The recipe is very easy to make to the point that I have roasted the pumpkin in the microwave in just 12 minutes, so we get a perfect soft texture to make our creamy sauce.

You can also prepare the sauce in advance, freeze it and use it when it suits you, so let's go for it although I'm going to use it in these spaghetti already.

Ingredients

  • 60 g butter
  • 1 large onion, chopped
  • 500 g pumpkin
  • 1 tablespoon chopped sage
  • 180 ml evaporated milk or cream
  • 180 ml vegetable broth
  • Salt
  • Freshly ground black pepper to taste
  • 500 g spaghetti
  • 100 g grated cheese (the one you like the most)
  • 100 g grated grana padano cheese
  • Fresh Sage leaves

Directions

Roast the pumpkin. We can do it in the oven for about 30 minutes or in the microwave 12-14 minutes.

In a medium saucepan, melt the butter over medium-high heat. Add the onion and cook, moving frequently, until it softens and begins to caramelize, (about 5 minutes.)

Add the roasted pumpkin and sage and cook by stirring all the time until slightly caramelized, about 5 minutes longer.

Add the evaporated milk (or cream, whatever we are going to use), and the broth, and cook covered, about 10 minutes. Crush and rectify salt and pepper and return to our saucepan to low heat.

Boil a large saucepan filled with salt water. When it is boiling add the pasta and cook until it is al dente. Drain and reserve a cup of the water to boil the pasta

Add the cooked pasta to the pumpkin puree along with the cheeses and 1/2 cup of the pasta water. we have to get a smooth and soft cream that accompanies the pasta as a sauce, so if necessary we will add a little more water until we get it.
