This watermelon salad has become a favorite on our table these days. And now the body appreciates lighter meals and the combination of fruits and vegetables for me is perfect.
Now we find in the market much more colored fruits than in winter and I love to incorporate them into my salads and create colorful dishes like this one today.
It is super easy to prepare and allows you to prepare it from one day to the next. It is perfect to take to the beach or picnic and to leave it prepared at home and find it cool on the way back from work.
- 1/4 of large watermelon
- 1 avocado
- 1/2 Cucumber
- 1/2 purple onion
- 1 handful of strawberries or cherries
- a bit of fresh cilantro
- a little fresh parsley
- some fresh peppermint
- 2 Tablespoons extra virgin olive oil
- 50 g of feta cheese
- a handful of crispy fried corn tortillas
We make balls with watermelon
We cut the avocado into dices
Cut the cucumber into wheels of 1/2 cm removing the seeds
Chopped the onion in thin rings
We put everything in one source and mix with the very chopped fresh herbs. Mix. Season with the lime, oil and a little salt.
Crumble a few pieces of feta cheese and finish with the pieces of corn tortilla on top to provide a crispy touch.
