These chocolate cookies are for me the best cookies of chocolate in the world. This recipe for chocolate cookies is that more resembles the cookies that I took the other day in Daily Provisions one of the sites discovered on my last trip to New York and I will tell you that you for practically everything.
The place bustles at all hours from breakfast when it begins the sale of bread, and serve several versions of eggs, passing through the lunch when they serve different kinds of meat and vegetarian options, vegetables, hummus and your favorite kind of bagel with different fillings. But in him there is always room for a coffee, tea or a beer accompanied by good music.
We went to the hour of snacking den looking for the best cheesecake in the city and this certainly was among the finalists and soon the first recipe. but the biscuit was a surprise. As a mi me gusta, they serve it warm, as if freshly made which makes the chocolate just melts in your mouth.
So after the success that was with us, and you, because many have asked me the recipe for cookies also, here I bring it you. And I notice has a tremendous danger. Javi class already are addicted because to get to this version I've done several tests in just two days and all have gone to school. The approved has been general and although they claim first version of chocolate cookies was already very good, I think that it was worth sharpen it a little as to the amounts of chocolate and chewy texture that according to me, a true cookie should be.
If you want more crisp chocolate cookies just have to bake a few more minutes, but I recommend to try it as is, at least in a couple of cookies because you are going to fall in love with.
The other feature of my chocolate cookies, is butter that we use in these cookies it will fry gently in a saucepan and that will give a unique flavor to the cookies and a scent to the kitchen that will make your neighbors will look to see what you are cooking.
Delicious, a perfect texture and a unique color go for these Cookies of chocolate that makes me mouth water!.
- 225 g butter
- 350 g flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 350 g of integral cane or brown sugar brown sugar
- 2 large eggs
- 2 large egg yolks
- 2 teaspoons pure vanilla extract
- 250 g dark chocolate
- Sea salt flakes for sprinkling on top (salt maldon)
Chop the chocolate and book.
In a saucepan, bring to Brown the butter over medium heat and move to avoid burning. Little by little butter will be taking a golden color. It must be very careful to make sure that the butter does not burn. Dump the butter in a large bowl and allow to cool for a few minutes
While in a bowl mix by hand rods eggs, yolks and sugar with vanilla. Then add the butter already melted cold and again mix.
Add the yeast and baking, and add the flour. Mix well (almost better with a wooden spoon at this time) until no lumps remain and all flour is well integrated. The dough will be very soft. Now add the chopped chocolate and mix until it is well integrated.
Preheat the oven to 180 degrees. Form equal balls. I weight 60 g serving and form balls with them with the help of hands, (you can also use a spoon of ice cream balls). Place the balls on a tray and freeze for 20 minutes. Also can stand in the refrigerator overnight (or even freeze them to bake another day)
When it has passed the standing time, line a baking sheet with baking paper. Place balls on tray. Place 6 separate dough balls and Bake 10 minutes. After this time, remove from the oven and tap on the countertop so that cookies are well finite. (if you like more gorditas you can skip this step.) Sprinkle with salt flakes and return to the oven for 3-4 minutes more.
Remove from the oven and wait a couple of minutes before moving them to a grid where we let them stand until they cool completely
Repeat with all the dough.
Ami son likes to take them as Americans: temperate when even the chocolate is melted and accompany them with a glass of milk cold as is without sugar or cola cao or anything. Just the cold milk. The contrast of temperature makes the mixture simply delicious. If you like the taste of milk of course
- Store in an airtight container
- He adds if you want a few chopped nuts
- Preparation time: 20 minutes more time of cooling
- Difficulty: easy
- Servings: 25 cookies approximately

I don't understand what you mean when you hit the countertop. Tap the tray against the countertop? Crush the cookies with your hand against the countertop?
Thank you in advance
Hello OLga, means to hit with the tray on the countertop. That makes the cookies go down and come out very thin. A hug
