I love making these persimmon persimmon cakes. They are easy, they are delicious and are perfect to take to the teachers at school, to give to the doorman or to that friend in the office who always has a smile for you.

I also love to prepare them and give them to my guests for dinner or lunch at home. So the next morning while they have breakfast they remember well that we have spent it together. I hope you enjoy the recipe as much as I do.

Ingredients:

For the crispy streusel

  • 100g flour
  • 50 g almond flour
  • 70 g of brown sugar
  • 50 g sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 100 g butter
  • 1/2 teaspoon vanilla extract

For biscuits

  • 225 g flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon salt
  • 150g butter at room temperature
  • 30ml olive oil
  • 150 g sugar
  • 1 full-fat plain yogurt (125 ml)
  • 1/2 teaspoon vanilla extract
  • 30 ml milk
  • 2 eggs
  • 3 Persimmon persimmons, chopped.

Directions

For the strusel, put all the ingredients in a medium bowl and mix well with your fingertips or a fork, making sure that all the ingredients are fully incorporated.

For the cake, preheat the oven to 180 ºC and grease a 22 cm mold or small ones as I did, lining with baking paper if it is a large mold or a baking paper at the bottom if they are small.

In a medium bowl, mix the flour, baking powder, baking soda and salt. In another bowl put the butter, oil and sugar. Beat until fluffy and creamy. Add the yogurt, milk and vanilla extract. Mix to combine. Add the eggs and mix completely. We sift the dry ingredients over the wet ingredients. Using a spatula or wooden spoon, fold until well combined. Add the chopped persimmons and mix so that they are covered with the dough.

Pour the dough into the prepared mold. Cover the top with the streusel and bake for 45 to 55 minutes, if it is a large mold or about 30 minutes if they are small, taking care that they do not burn. You know that they are ready when you insert a toothpick in the center it comes out clean.

I like to put them in cellophane paper bags or wrap them in tissue paper to give them away.
