This pasta with gorgonzola and Sage vinaigrette salad has become a wild card at home. And it is that it is equally delicious cold than warm. At home we are uppercase pasta lovers. I always have several kinds of pasta and I enjoy very much using different forms in the recipes of a lifetime. Today I have substituted the fusili which normally use in salads, by a Mafalda, a variety of short curly pasta that Garofalo has and that I love because it makes entering the ingredients of the salad in your fork.
But I'll be honest, I mostly like it because pasta is precious and in the table looks like triple than a salad of pasta so lovely without extra work, and that is always a plus don't you think?.
This recipe of pasta with gorgonzola salad is a different proposition that triumph at home in a simple way or take you to the office and show everyone that you can eat well without complications.
The mixture of pears with gorgonzola cheese is incredible and puts the finishing with Sage and Walnut vinaigrette. Nuts are the crunchy touch in this version of pasta salad that my son loves taking hot and that I enjoy from the fridge. A salad with thousand possibilities I'm sure you'll love. Let's go for it!
- 1 pack of garofalo short mafalda
- 100 g cold gorgonzola cheese
- 2 pears
- 50 g pine nuts
- 50 g walnuts
- a few leaves of Sage
- extra virgin olive oil
- white wine vinegar
Directions
Cook the pasta in plenty of water with a little salt, leaving it to the date. When you are ready, rinse in cold water to stop the cooking and set aside on a colander so that you release all excess water. About to put salt.
Cut the diced gorgonzola cheese. This cheese is very creamy, and will help us until it has cooled you can cut well, since otherwise it will be very difficult.
In a skillet, Brown the pine nuts so they have a crunchy texture and have all its aroma. Book
Chopping the nuts with your hands. In a mortar, crush half of nuts with the Sage leaves. Mix with olive oil and a little vinegar and set aside.
Cut the pears in thick wheels which, in turn, cut into pieces. Book.
On a plate, put the pasta and place over pears and cheese. Add the pine nuts and other nuts to our pasta salad. Serve accompanied by Sage vinaigrette
